Turkey-Veggie Meatloaf Balls
This is a kind of meatloaf that tastes amazing. And it is very nutritious.
Ingredients:
- 2 cups finely chopped zucchini
- 1 cups finely chopped red onions
- 1 red bell pepper, finely chopped
- ½ cup finely chopped parsley
- 1 cup finely chopped mozzarella cheese
- 1 pound ground turkey
- ½ cup cooked quinoa (or raw fine bulgur)
- 1 egg
- 2 tablespoon mustard
- 2 tablespoon olive oil
- 1 tablespoon barbecue sauce
- 1 teaspoon turmeric
- Salt and pepper (salt amount depends on how salty cheese is)
Directions:
- Preheat oven to 400 degrees F (200 C). Spray about 25 muffin cups with cooking spray.
- Mix all ingredients
- Fill each prepared muffin cup about ¾ full
- Top each cup with about teaspoon of barbecue sauce
- Bake in the preheated oven about 25-30 min
- Let stand 10 minutes before serving
